Just like the Carraba’s Mama Mandola’s Sicilian Chicken Soup, I got this recipe from the Carraba’s Italian Grill Cookbook that I borrowed from our local library.
Ingredients:
- 4 Boneless Chicken Breasts
- 1 1/2 tsp Carraba’s Grill Seasoning
- 3 Tbsp Olive Oil
- 4 oz Goat Cheese
- Lemon Butter Sauce
- 4 Sun Dried Tomatoes
- 1 Tbsp Basil
Steps:
- Prepare lemon butter sauce
- Add sun dried tomatoes to the lemon butter sauce, set aside
- Pre-heat a skillet with olive oil
- Prepare chicken using seasoning and cook it in the skillet
- Top chicken with goat cheese
- Transfer to a plate and top with the sun-dried tomatoes lemon sauce and basil
- Enjoy
